Pasta with tuna
Pasta with tuna more than an upgrade of pasta aglio e olio. The ubiquity of the ingredients and simplicity in execution make it a wide loved dish.
It may be an improvised dish, a last minute choice. Yet it has personality and deserves respect.

Ingredients
- 400g of spaghetti
- 200g of tinned tuna
- One onion
- Olive oil
Instructions
- Start by putting your water to boil
- Dice the onion and fry in olive oil
- Add the drained tuna
- Stir well, add some water the pasta is boiling in
- Drain the pasta, leaving a cup of water apart
- Add the spaghetti to the pan
- Stir and add more cooking water

Spaghetti with tuna is an easy and fast dish. There are though some elements that make the difference. The choice of tinned tuna is one. Bear in mind that you get what you pay for. The same goes for spaghetti. Very important is to treat the dish with respect.Variations are plenty. Famously is the garlic and oil version. Leave the onion out. Some add tomato sauce to the dish. At that point you may add capers and olives. Lemon blends in wonderfully. You may add a squeeze or some zests. Parsley and chili pepper? Why not.Other types of pasta are ok. This is a typical last minute dish in Italy. The solution to running out of ingredients. Or wanting to prepare a midnight snack. This does not mean you can serve it to guests. As long as they are not Italian.
