Ingredients
- 8 chicken thighs
- 250 ml of fresh orange juice
- 250 ml of chicken broth
- Fennel seeds
- flour
- salt and pepper
Instructions
- Wash the thighs with boiling water
- Dry the chicken and pass it in flour
- Sear the thighs in olive oil
- Season with salt and pepper
- Add the juice, broth and fennel seeds
- Cover the pan and let it simmer for about 20 minutes
- Turn the chicken over half way through
- Serve the pollo all'arancia

This pollo all'arancia recipe is basic. One can build on it. You could for example add a teaspoon of marmalade. It does emphasize the orange. But add too much marmalade and the outcome is compromised. The same goes for Marsala wine. In Italy chicken and orange is a secondo, a main dish. It doesn't come with accompanied carbs. Maybe some bread though that is usual decorative. This chicken dish goes along well with white rice as with boiled potatoes.What to drink with this fragrant dish?
