Chicken salad
Italian Style chicken salad starts with leftover chicken. And preferably with different parts of chicken. Apart from being delicious, it is easy to prepare. And it can be prepared in advance. An ideal recipe for those who are not that keen on cooking.

Ingredients
- 400 grams of cold roasted chicken
- 1 head of lettuce
- 2 stalks of celery
- 10 pickled silver onions
- 5 gherkins
- 1 carrot
- 10 unboned black olives
- 40 grams of mayonnaise
- 40 grams of ketchup
- Salt and pepper
Instructions
- Cut the chicken in nibbles
- Wash and dry the lettuce
- Grate the carrot and dice the celery
- Cut the gherkins and onions in halves
- Mix the mayonnaise with ketchup
- Unite all the ingredients in a large bowl
- Mix and serve

Italian Style Chicken Salad is an easy dish. It requires no cooking skills whatsoever. Since you use leftovers, any part is fine. Ideally using thighs, breast and wings gives the best result.The seasoning, mixing mayo and ketchup, in Italy is known as salsa rosa. Pink sauce. You can add some spice with tabasco or chili pepper.You may add capers to the chicken salad. Use the pickled ones. This salad is an excellent meal. It loves the company of toasted bread. Smaller portions are nice for an aperitif. The seasoning and presence of pickles excludes lighter wines. Go for a full bodied red or even cocktails.
