Ice tomatoes
Ice tomatoes are a Chinese invention. But allegedly so is pasta. And that has settled pretty solidly in Italy.
Once you get over the idea that tomatoes don’t have to be savory, this is a great dish.

Ingredients
- 4 tomatoes
- 75 grams of sugar
- fresh mint
Instructions
- Place the tomatoes one by one in boiling water
- Transfer them in ice water
- Peel the tomatoes
- Cut them in eight wedges
- Remove the seeds and the hard parts
- Gently mix the sugar and the tomatoes in bowl
- Add shredded mint leaves
- Cover the bowl with cling film
- Put the bowl in the freezer for 30 minutes

Ice tomatoes are surprising. First because they are sweet. And then because they are tasty. Instead of caster sugar, better use icing sugar. Not because of the name of the dish. It dissolves better and results smoother.This is a nice and solid base. So you can build on it. An interesting touch comes with the adding of chili pepper. Add some dried flakes.Ice tomatoes are served cold very cold. But not frozen. So instead of thirty minutes in the freezer, you can put them in the fridge for 3 hours.Ice tomatoes are excellent in a fruit salad. You better dice your tomatoes.
