Frittata di carciofi, artichoke-egg dish

Frittata di carciofi is royalty amongst the egg dishes. It takes a bit a dexterity to clean the artichokes. Once mastered a world of possibilities opens up. This dish is excellent as started. Wonderful as a main dish. And truly delicious as snack.

  • 4 big carciofi - artichokes
  • 4 eggs
  • 2 cloves of garlic
  • 50 grams of grated cheese
  • Fresh mint
  • Half a glass of white wine
  • Olive oil
  • Salt and pepper


  1. Clean the artichokes
  2. Slice the heats
  3. Heat olive oil in a pan with the garlic
  4. Add the artichokes and fry for about 5 minutes
  5. Add the wine and let it evaporate
  6. In a bowl beat the eggs with grated cheese, salt and pepper
  7. Transfert the artichokes in the bowl with the egg mix and stir
  8. Gently pour the mix back in the pan
  9. Flip the fritttata di carciofi after about 5 minutes


Frittata di carciofi is one of the more elaborate frittata dishes. The cleaning is rather demanding. An unacceptable shortcut is the use of precooked artichokes. The result is only nasty. And gives frittata di carciofi a bad name.Some remove the garlic before adding the artichokes. This is entirely up to personal taste. The adding of cheese is often discussed. Caciocavallo and parmesan may result overpowering. We suggest the adding of a couple of spoons of fresh ricotta.This dish goes well with strongly structured white wines. Our choice goes to Camurria Orange. A Sicilian organic wines with character. Or serve it with plain water. Artichokes has the quality to make water taste great.
