Notes

Frittata di carciofi is one of the more elaborate frittata dishes. The cleaning is rather demanding. An unacceptable shortcut is the use of precooked artichokes. The result is only nasty. And gives frittata di carciofi a bad name. Some remove the garlic before adding the artichokes. This is entirely up to personal taste. The adding of cheese is often discussed. Caciocavallo and parmesan may result overpowering. We suggest the adding of a couple of spoons of fresh ricotta. This dish goes well with strongly structured white wines. Our choice goes to Camurria Orange. A Sicilian organic wines with character. Or serve it with plain water. Artichokes has the quality to make water taste great.
