How do you get children to eat broccoli? How do you surprise your guest at the aperitif? With this rather easy recipe you have a winner. The croquettes can be over baked or deep fried. The cheesy heart is an optional. But since all good things have heart, we will include it.

Ingredients

  • 400 grams of broccoli
  • 400 grams of potatoes
  • 80 grams of grated cheese (parmesan or grana)
  • 50 grams of breadcrumb
  • 3 eggs
  • 120 grams of sweet provola cheese

Instructions

  1. Boil your broccoli and potatoes -separately- till soft
  2. Mash the broccoli and potatoes, using a fork
  3. Toast half of the breadcrumb till golden brown
  4. Add the breadcrumb, grated cheese and one egg and mix
  5. Roll balls the size of an average walnut
  6. Flatten the sphere on the palm of your hand
  7. Add a cube of provola cheese (half a centimeter cubes)
  8. Reform a sphere, then pass them in lightly beaten egg white
  9. Roll the balls in remaining breadcumb
  10. Fry for 5 minutes at 190 degrees or bake for 15 minutes at 180 degrees

Notes

Broccoli and potato croquettes are a dish you won't forget easily. Although more than a dish it is a snack. Broccoli can be substituted with cauliflower. Breading the ball with panko increased the crunchiness. You may use grated pecorino cheese instead of parmesan. That way the croquettes result a tad sharper in taste.The croquettes match sparkling wine. Actually, they are a match made in heaven.
